In a medium saucepan, heat a medium saucepan with oil; add mushroom and pork mince; cook for 5 minutes or until browned.
Add ginger, mirin, Sweet Chilli Sauce, soy sauce and flavour sachets from Hot & Spicy Noodles (reserving noodles until later). Add 3 cups (750mL) water to pan; bring to the boil.
Add reserved noodles to pan, cook for 3 minutes or until noodles are tender; stir through shallots and coriander. Serves immediately.
