Salt Crusted Pork Roast

    Boneless Pork Leg
  • 60ml (¼ cup)
    Olive Oil
  • 2 tbsp
  • 5 (1kg)
    Potatoes, Cut Into Wedges
  • 2 tbsp
    Olive Oil (For Potatoes)

How to Cook

Prep Time: 20 minutes | Cooking Time: 90 minutes
  1. Place a wire rack in a large roasting pan. Pat the pork dry with paper towel and place, rind-side up, on the rack. Place, uncovered, in the fridge for 24 hours to dry.

  2. Preheat oven to 230ºC. Drizzle 1 tbsp of oil over the rind. Rub salt into the scores. Roast for 30 minutes until the rind crackles.

  3. Reduce oven temperature to 180ºC – place potatoes in a large roasting pan. Drizzle over remaining oil. Season, then toss to combine. Roast with the pork for 60 minutes or until the pork is cooked through. Set aside the pork for 10 minutes to rest.

  4. Meanwhile prepare the MAGGI Roast Meat Gravy following packet directions

  5. Transfer the pork and potatoes to a large platter. Thinly slice the pork. Serve with the gravy.
