Homemade Baked Beans with Poached Egg

    olive oil

    onion, finely chopped

    shortcut bacon, chopped finely
  • 400g can
    crushed tomatoes
  • 400g can
    cannellini beans, rinsed and drained
  • ½ cup (125mL)
  • 1 pkt
    MAGGI Beef Goulash Recipe Base
  • 2 tsp
    wholegrain mustard
  • 8
  • 1 tbsp
    flat leaf parsley, freshly chopped
  • 8 slices
    crusty toast, to serve

How to Cook

Prep Time: 10 minutes | Cooking Time: 25 minutes
  1. Heat oil in a large frying pan, cook onion and garlic for 2-3 minutes or until soft. Add bacon and cook a further 2 minutes.

  2. Add tomatoes, beans, combined water and Recipe Base and mustard. Bring to boil and simmer 15 minutes, stirring occasionally

  3. Meanwhile; poach eggs to your liking.

  4. Stir parsley into beans and serve baked beans over crusty toast topped with a poached egg
