Seafood with Udon Noodles

Ingredients

  • 1 tbsp
    soy sauce
  • 2 tsp
    grated fresh ginger
  • 2 tbsp
    sweet chilli sauce
  • 1 tsp
    Garlic Stock Powder
  • 1
    lime, zest and juice
  • 2 tsp
    cornflour
  • 500 g
    seafood mix
  • 400 g
    fresh udon noodles
  • 2 tsp
    olive oil or cooking spray
  • 4 (100g)
    spring onions, sliced
  • 1/4 cup (10g)
    coriander leaves
  • 1 tbsp
    fresh lime juice, extra
  • rocket, snow pea shoots, baby spinach, fresh herbs, to serve
  • toasted sesame seeds, to garnish

How to Cook

Prep Time: 10 minutes | Cooking Time: 10 minutes
  1. Place firstĀ 6 ingredients in a medium bowl and mix to combine. Add seafood and mix well.

  2. Place noodles in a large bowl, cover with boiling water and stand for 3 minutes.

  3. Heat oil in a large non-stick frying pan. Add seafood mixture and cook over a moderate heat for 3 minutes, stirring gently.

  4. Add drained noodles and spring onions. Simmer for a further minute.

  5. Remove from heat, stir in coriander and extra lime juice.

  6. To serve, arrange rocket leaves, snow pea shoots, baby spinach and herbs on a serving dish. Top with seafood mixture and sprinkle over toasted sesame seeds.
