Roasted Vegetable Pizza

Ingredients

  • 1 large
    ready made pizza base
  • 1/2 (75g)
    red onion, chopped
  • 1 (200g)
    red capsicum, sliced
  • 1/2 cup (70g)
    butternut squash, chopped
  • 1 (70g)
    courgette, sliced into 2cm thick rounds
  • 2 tsp
    olive oil or cooking spray
  • 1 tsp
    MAGGI Green Herb Stock Powder
  • 1 pkt
    MAGGI Tomato & Onion Soup Mix
  • 1/2 cup (120mL)
    boiling water
  • 2 tbsp
    pine nuts
  • 100 g
    feta cheese, crumbled
  • 1/2 cup (10g)
    fresh basil, to garnish

How to Cook

Prep Time: 15 minutes | Cooking Time: 45 minutes
  1. Preheat oven to 200°C.

  2. Place vegetables in a roasting dish.  Add oil and Green Herb Stock Powder, toss well.  Bake in preheated oven for 25 minutes, stirring once during cooking.

  3. Increase oven temperature to 220°C.

  4. Combine Tomato & Onion Soup Mix and boiling water, whisk until smooth.  Spread evenly over pizza base.  Top with roasted vegetables.  Sprinkle over pine nuts and feta cheese.  Bake in preheated oven for 20 minutes.  Serve garnished with fresh basil and a fresh green salad.
