Pumpkin & Chickpea Puffs

Ingredients

  • 1 pkt
    MAGGI Pumpkin & Roasted Garlic Soup Mix
  • ½ cup (120mL)
    water
  • 1 x 300g can
    chickpeas, drained and mashed
  • ½ tsp
    curry powder
  • ½ cup (10g)
    chopped fresh parsley
  • 3 cups (420g)
    diced pumpkin
  • 4 sheets
    flaky puff pastry
  • 1
    egg

How to Cook

Prep Time: 20 minutes | Cooking Time: 40 minutes
  1. Preheat the oven to 200°C.

  2. Combine Pumpkin & Roasted Garlic Soup Mix with water, add chickpeas, curry powder and parsley.

  3. Bake pumpkin for 20 minutes or until soft, add to soup mixture.

  4. Cut each pastry sheet into 4 and brush with egg, place a spoonful of mixture in the middle of each square. Fold into a triangle and press the edges together with a fork, brush with remaining egg.

  5. Bake for 15-20 minutes or until golden.
