Courgette, Ricotta & Mint Fritters


  • 1/2 cup (75g)
    self-raising flour
  • 1 pkt
    MAGGI Parsley Sauce Mix
  • 1/2 cup (120mL)
  • 1 (60g)
    egg, beaten
  • 1/2 cup (100g)
    grated reduced fat ricotta or cottage cheese
  • 1 (120g)
    courgette, grated
  • 1/4 cup (10g)
    torn mint leaves
  • cooking spray

How to Cook

Prep Time: 10 minutes | Cooking Time: 20 minutes
  1. Sift flour into a large bowl.

  2. In a separate bowl combine Parsley Sauce Mix and water.  Add egg, ricotta, courgette and mint leaves and mix gently.

  3. Combine with flour to make a batter.

  4. Heat a non-stick frying pan and spray lightly with cooking spray.  Cook spoonfuls of batter until bubbles form on surface and turn.  Cook until the second side is lightly browned.  Repeat with remaining mixture.
