Chilli, Tomato & Capsicum Pasta Sauce

Ingredients

  • 375 g
    fettuccine
  • 2 tsp
    olive oil or cooking spray
  • 1 clove
    garlic, crushed
  • 1 (150g)
    onion, sliced
  • 1(200g)
    red or yellow capsicum, sliced
  • 3 tsp
    cornflour
  • 1 x 400g
    can chopped tomatoes in juice
  • 1 cup (240mL)
    water
  • 1 tsp
    MAGGI Vegetable Stock Powder
  • 1 tbsp
    sweet chilli sauce
  • 2 tbsp
    sliced black olives
  • 130 g
    baby spinach leaves

How to Cook

Prep Time: 15 minutes | Cooking Time: 15 minutes
  1. Cook pasta following packet directions, drain, keep warm.

  2. Heat oil in pan, add garlic, onion and capsicum, cook 2 minutes.

  3. Add combined remaining ingredients except spinach, bring to boil stirring, simmer 1 minute.

  4. Pour sauce over pasta, garnish with spinach and serve.
