Mussels in Rich Tomato Sauce


  • 2 tsp
    olive oil or cooking spray
  • 1 (150g)
    onion, chopped
  • 1 clove
    garlic, crushed
  • 1 pkt
    MAGGI Rich Tomato Soup Mix
  • ½ cup (120mL)
    white wine or water
  • ¼ cup (60mL)
  • 1 x 400g
    can chopped tomatoes in juice, 400g
  • 400 g
    white fish fillets, cut into chunks
  • 24 x
    raw mussels, scrubbed and beards removed
  • freshly ground black pepper
  • chopped fresh herbs, to garnish

How to Cook

Prep Time: 10 minutes | Cooking Time: 10 minutes
  1. Heat oil in a large non-stick frying pan. Add onion and garlic, cook for 2 minutes, stirring.

  2. Add combined soup mix, wine, water and tomatoes. Bring to the boil, stirring.

  3. Add fish and mussels. Cover and cook over a moderate heat until mussels have opened. Shake pan occasionally while cooking. Remove mussels from pan and discard any that have not opened.

  4. Season sauce with freshly ground black pepper. Pour into serving dish, top with mussels and garnish with fresh chopped herbs. Serve with crusty bread and a green salad.
