Spicy Pork Meatballs


  • 400g
    lean pork mince
  • 1 small (80g)
    carrot, grated
  • 1 small (70g)
    zucchini, grated
  • 1 egg
    egg, lightly beaten
  • ½ cup (35g)
  • 1 pkt
    MAGGI Mexican Nachos Recipe Mix
  • 1 tbsp
    canola oil, plus¼ cup (60mls), extra
  • 1 tsp
    Dijon mustard
  • ¼ cup (60mL)
    white wine vinegar
  • 1 tsp

How to Cook

Prep Time: 15 minutes | Cooking Time: 15 minutes
  1. Combine pork, carrot, zucchini, egg, breadcrumbs, Recipe Mix in a bowl. Use clean hands to mix until well combined. Shape mixture into 16 meatballs.

  2. Heat oil in large grill pan on medium heat; add meatballs, cook 7 minutes on each side or until cooked through, set aside. In a small bowl combine mustard, vinegar, honey and extra oil. Whisk until combined.

  3. In a large bowl combine nectarines, baby spinach, red onion, avocado and cucumber. Drizzle with desired amount of dressing and carefully toss. Serve with spicy meatballs
