Nectarine, Prosciutto and Feta Salad

    Persian feta, drained, ΒΌ cup (60mL) oil reserved
  • 2 tbsp
    balsamic vinegar
  • 100g
    pkt thin slices prosciutto
  • 100g
    rocket leaves
  • 2 medium
    nectarines, halved, stones removed, cut into wedges

How to Cook

  1. In a small bowl, place reserved oil from the feta, add balsamic vinegar, whisk to combine.

  2. Arrange rocket over serving platter, top with prosciutto, nectarines, feta; drizzle with the dressing; serve immediately.
