Kumara, Leek & Bacon Gratin

Ingredients

  • 600 g
    kumara, scrubbed and diced
  • 2 tbsp
    unsalted butter
  • 1 (200g)
    leek, sliced
  • 1 (150g)
    apple, peeled, cored and sliced
  • 1 x 250g can
    NESTLÉ Reduced Cream
  • ½ cup (120mL)
    trim milk
  • 1 pkt
    MAGGI Vegetable Sides Creamy Cheese & Garlic Potato Bake Recipe Mix
  • freshly ground black pepper
  • 4 rashers
    bacon, grilled and chopped
  • ½ cup (60g)
    grated cheese

How to Cook

Prep Time: 15 minutes | Cooking Time: 45 minutes
  1. Preheat oven to 200°c.

  2. Cook kumara in boiling salted water for 10 minutes or until tender. Drain. Cool slightly.

  3. Melt butter in a pan. Cook leek for 2-3 minutes. Stir in apple. Set aside. Combine reduced cream, milk, vegetable bake recipe mix and black pepper to taste.

  4. Place kumara in an ovenproof dish. Top with leek and apple, then bacon. Sprinkle over grated cheese. Pour over cream mixture.

  5. Bake in preheated oven for 40 minutes or until tender and golden. Serve with crusty bread and green salad.
