Heat oil in a large frying pan over medium heat. Add onion and cook, stirring, for 5 mins or until softened. Add lamb and cook, stirring to break up any lumps, for 5 mins or until browned. Stir in chickpeas and MAGGI Spanish Rice Recipe Mix and cook, stirring, for 1 min or until aromatic. Remove from heat. Add reserved rice, fetta and spinach and stir to combine.

Divide mince mixture evenly between capsicums. Place 1 reserved top on each stuffed capsicum. Spray with oil. Bake for 20 minutes or until capsicums have softened and skins start to darken.
