Chicken Chorizo and Bean Cassoulet

Ingredients

  • spray oil for cooking
  • 3 (75g)
    bacon rashers, cut into strips
  • 1
    chorizo, sliced thinly
  • 1
    onion, quartered
  • 1tbsp
    garlic puree
  • 500g
    chicken thigh fillets, fat trimmed, cut into chunks
  • 2 tbsp
    plain flour
  • 1½ cups (375mL)
    water
  • 1 cup (250mL)
    milk
  • 1 cup (250mL)
    cannellini beans, drained and rinsed
  • 1 cup (120g)
    peas

How to Cook

Prep Time: 5 minutes | Cooking Time: 25 minutes
  1. Heat frying pan, spray with oil, add bacon, chorizo, and garlic and chicken, cook for 5 minutes. Add onion and 1 tbsp flour, stir through to absorb pan juices.

  2. Mix a small amount of water with remaining flour to make a paste. Add with remaining water and milk, heat with stirring until thickened, cover and simmer for 15 minutes. Remove cover; add beans and peas cook further 5 minutes.
