Spicy Beef and Noodle Salad


  • spray oil for cooking
  • 300g
    rump steak
  • 2 tbsp
    Sweet Chilli Sauce
  • 2/3 cup (170mL)
    low fat French dressing
  • 1 tbsp
    basil or mint, chopped
  • 700g
    hokkien noodles
  • 1 medium (200g)
    green capsicum, thinly sliced
  • 1 medium (200g)
    red capsicum, thinly sliced
  • 150g
    snow peas, halved
  • 1 punnet
    cherry tomatoes, halved
  • 1 (140g)
    Lebanese cucumber, sliced

How to Cook

Prep Time: 20 minutes | Cooking Time: 6 minutes
  1. Heat a non stick frying pan over medium high heat; spray with oil. Add steak, cook for 3 minutes each side. Remove; cover with foil and set aside for 5 minutes before thinly slicing.

  2. Combine sweet chilli sauce, dressing and basil in a small bowl or jug. Set aside.

  3. Place noodles in a large heatproof bowl and cover with boiling water. Stand until tender; separate the noodles with 2 forks. Drain thoroughly. Place in a large bowl with steak, dressing, capsicum, snow peas, tomatoes and cucumber; toss thoroughly to combine.
