Parmesan & Basil Crusted Lamb Racks with Potato Bake

Ingredients

  • POTATO BAKE:
  • 1 pkt
    MAGGI Creamy Cheese & Garlic Potato Bake Recipe Mix
  • 4
    potatoes, thinly sliced
  • 1½ cups
    milk
  • ½ cup
    grated cheese
  • LAMB CRUST:
  • ½ cup
    grated parmesan cheese
  • ¼ cup
    fresh basil
  • 1 tsp
    MAGGI Beef Stock Powder
  • 1 slice
    white bread
  • freshly ground black pepper
  • LAMB:
  • 2 tbsp
    seeded mustard
  • 2
    lamb racks, 8 cutlets each

How to Cook

Prep Time: 10 minutes | Cooking Time: 30 minutes

POTATO BAKE:

  1. Preheat oven to 200°c.

  2. Prepare MAGGI Creamy Cheese & Garlic Potato Bake Recipe Mix following packet directions and place in oven.

LAMB:

  1. Place crust ingredients in food processor, process into crumbs.

  2. Spread mustard over lamb rack, firmly press crust mixture over top.

  3. Place lamb racks, crust side up, in baking dish and cook 25 minutes or until medium rare. Allow to stand 5 minutes before carving.

  4. Serve with potato bake and oven-roasted vine-ripened tomatoes, if desired.
