Naked Burrito Bowls

Ingredients

  • 1 tbsp
    Oil
  • 500g
    lean minced beef
  • 1 medium (150g)
    onion, diced finely
  • 1 pkt
  • 1 x 400g can
    chopped tomatoes
  • 1 x 400g can
    red kidney beans, rinsed
  • 1 medium (200g)
    avocado, halved, stone removed, diced
  • 1 x 400g can
    corn kernels, rinsed and drained
  • 1 medium (150g)
    tomato, chopped
  • 2 tbsp
    chopped fresh coriander
  • 1
    lime, juiced
  • 2 cups
    cooked rice
  • 1/2 cup (60g)
    grated tasty cheese
  • 1/3 cup (80g)
    light sour cream

How to Cook

Prep Time: 10 minutes | Cooking Time: 10 minutes
  1. Heat oil in a large frying pan, add beef and onions, cook for 5 minutes or until browned.

  2. Add MAGGI Mexican Nachos, tomatoes and beans. Cook for 5 minutes or until cooked

  3. In a medium bowl; combine avocado, corn, tomato, coriander and lime juice to make a salsa

  4. Add rice to a large serving bowl, cover with mince, sprinkle with cheese top with salsa, dollop sour cream to finish.
