Cracked Pepper Beef with Ratatouille Couscous

Ingredients

  • CRACKED PEPPER BEEF:
  • 500 g
    beef sirloin steak
  • 1 pkt
    MAGGI Cracked Pepper Sauce Mix
  • 2 tsp
    olive oil or cooking spray
  • RATATOUILLE COUSCOUS:
  • 2 tsp
    olive oil or cooking spray
  • 1
    onion, sliced
  • ½
    green capsicum, sliced
  • 2
    courgettes, sliced
  • 1 tsp
    MAGGI Green Herb Stock Powder
  • 1 tsp
    brown sugar
  • 1 tbsp
    balsamic vinegar
  • 1 can
    chopped tomatoes, 400g
  • ¾ cup
    couscous
  • freshly ground black pepper
  • 1 tsp
    dried oregano

How to Cook

Prep Time: 10 minutes | Cooking Time: 35 minutes

CRACKED PEPPER BEEF:

  1. Preheat oven to 220°C. Rub beef all over with Sauce Mix.

  2. Heat oil in a frying pan. Add beef to pan and sear, turning frequently. Place in a roasting dish and cook in preheated oven, 10-15 minutes. Leave to rest, covered, for 10 minutes, then thinly slice.

RATATOUILLE COUSCOUS:

  1. Heat oil in a frying pan, add onion, green pepper and courgettes, stir-fry over high heat for 3 minutes.

  2. Add remaining ingredients. Bring to the boil, stirring. Remove from heat, cover and leave for 5 minutes. Season with black pepper to taste.
