Chilli Beef Bolognese

Ingredients

  • 1 tbsp
    olive oil
  • 1 (150g)
    onion, chopped
  • 2 cloves
    garlic, crushed
  • 1 tsp
    dried chilli flakes
  • 1 tbsp
    thyme
  • 500g
    lean beef mince
  • 1/4 cup (60ml)
    balsamic vinegar
  • 2 tbsp
    tomato paste
  • 1 cup (250ml)
    beef stock
  • 2 cans (800g)
    crushed tomatoes
  • 500g
    pappardelle
  • finely grated parmesan and basil leaves, to serve

How to Cook

Prep Time: 10 minutes | Cooking Time: 30 minutes
  1. Heat oil in a large non-stick frying pan over high heat. Add onion, garlic, chilli and thyme; cook for 3minutes or until softened. Add mince, season with salt and pepper and cook for 10 minutes or until browned. Add vinegar, tomato paste, stock and tomatoes and bring to a simmer. Reduce the heat to low, cover and cook for 20 minutes.

  2. Meanwhile cook the pasta in a large saucepan of salted boiling water for 7–8 minutes or until al dente. Drain, divide between plates and top with the Bolognese, parmesan and basil leaves to serve.
