Preparation

Prep Time: 10 mins | Cook Time: 12 mins | Serves: 4

SIMPLY ADD

  • 500g chicken thigh, each cut into 5–6 strips
  • 3 cups (180g) iceberg lettuce, shredded finely
  • 8 mini tortillas, warmed

Salsa

  • 125g can corn kernels, drained
  • 2 tomatoes (300g), diced finely
  • 2 tbsp (15g) coriander, chopped finely

GET COOKING

  1. In a large zip lock bag or bowl add 1 tbsp oil and MAGGI Recipe Base, add chicken strips and mix well to coat.
  2. In a large fry pan on high heat, add 1 tbsp oil. Place chicken strips down flat, reduce heat to medium-low and cook for 4–5 minutes, turn chicken over and then cook until browned and cooked through.
  3. In a bowl combine corn, tomato and coriander; set aside.
  4. To assemble taco place tortilla on serving plate, add lettuce and chicken, top with salsa. Serve with a lime wedge or avocado if desired.

Tip from Mexico: Try adding jalapeños for extra spice!
