Preparation
Meat Night
Serves: 4 | Preparation time: 10 Minutes | Cooking time: 10 Minutes
SIMPLY ADD:
- 500g chicken thigh fillets, fat trimmed, sliced
- 1 medium red capsicum (130g), deseeded and diced
- 400g can black beans, rinsed and drained
- 4 cups lettuce (200g), sliced
- 3/4 cup cheese (90g), grated
- 1/2 bunch coriander (20g), finely chopped
- 10 regular tortilla (400g)
GET COOKING:
- Marinate chicken with MAGGI Recipe Base and 1 tsp of oil.
- Heat 2 tsp oil in a pan, brown chicken for 2 minutes. Add capsicum and cook for 1 minute.
- Add black beans and ½ cup (125ml) of water. Simmer uncovered for 5 minutes or until chicken cooked through, stirring occasionally.
- Warm tortilla according to packet directions. Serve chicken mixture on warmed tortillas with lettuce, cheese and coriander. Enjoy!
No need to add extra salt.
Recipe Tip: Serve with sour cream and a squeeze of lime.
Veggie Night
Serves: 4 | Preparation time: 10 Minutes | Cooking time: 10 Minutes
SIMPLY ADD:
- 1 medium red capsicum (130g), deseeded and diced
- 400g can pinto beans, rinsed and drained
- 400g can black beans, rinsed and drained
- 1 cup frozen corn kernels (160g)
- 2 medium avocado, mashed
- 1/2 bunch coriander (20g), finely chopped
- 10 regular tortilla (400g)
GET COOKING:
- Heat 2 tsp oil in a pan, add capsicum and cook for 1 minute. Add black and pinto beans.
- Add combined ½ cup of water (125ml) and MAGGI Recipe Base, bring to the boil, stirring.
- Add corn and simmer uncovered for another 3 minutes.
- Warm tortilla according to packet directions. Serve with warmed tortilla, avocado and cilantro. Enjoy!
