Preparation

SIMPLY ADD

  • 500g lean chicken thigh fillets (consider free range), cut into thirds
  • 1 large onion (200g), sliced
  • 410g can apricot halves in juice OR 400mL apricot nectar
  • 2 cups plain mashed potato (340g)

GET COOKING: PREP 10 mins | COOK 40 min

  1. Drain apricots, reserving juice. Make up to 1 cup (250mL) with water (Skip this step if using nectar).
  2. Heat 2 tsp oil in a pan, add onion, brown chicken, cook for 2 minutes.
  3. Add apricots and combined MAGGI Recipe Base with reserved juice mixture OR apricot nectar with ½ cup (125mL) water. Bring to the boil stirring.
  4. Cover and simmer 30 minutes, or until chicken is cooked, stirring occasionally. Serve over plain mash. Enjoy!

No need to add extra salt.
