Chicken Kebabs on Cauliflower Rice with Kale Chips

Ingredients

  • Satay Chicken Kebabs with Kale Chips
  • Ingredients
  • 500g chicken thighs/ breast
  • 1 whole Cauliflower
  • Maggi Satay chicken recipe base
  • Seasoning of your choice
  • Olive oil
  • 1 Capsicum
  • 2 cups kale
  • Garlic salt
  • Recipe
  • Preheat oven to 160* C
  • Cut chicken into small pieces and place chicken in a large bowl
  • Add the maggi satay chicken, a little water and olive oil
  • coat chicken in mix
  • Cut a capsicum into pieces the same size as the chicken
  • Add the chicken and capsicum to the skewers
  • Start cook the kebabs on medium and a pan with oil
  • Cut a whole cauliflower into medium pieces
  • Add the cauliflower to a food processor and blend till the cauliflower is like cous cous
  • Once the cauliflower is done put it in a pan on medium for 5-6 minutes
  • While the cauliflower is in the pan get the kale leaves and lay out on a tray with olive oil and garlic salt
  • Put kale into oven for 5 minutes or until slightly brown and crispy
  • After they are cooked add another shake of garlic salt
  • Plate up
