GIS Beetroot Slaw


  • 1 beetroot
  • 2 carrots
  • ½ cup of quinoa
  • Maggi Apricot Chicken Recipe Base
  • Pumpkin seeds
  • 3 tbl of apricot juice from a tin of apricots
  • Bring quinoa to the boil with 1 cup of water and the Maggi Apricot Chicken base.
  • Grate the beetroot and carrots
  • Mix quinoa, beetroot, carrots and pumpkin seeds and drizzle apricot juice over the top.
  • For a non-vegetarian option you can add shredded chicken.
