Know your portions
One area that has caught some schools out in previous years is portion sizes. Even when the meal looks great too much food on the plate can be off putting. This is the one area Mike and myself always agree and will be paying particular attention to in 2014.
A rough guide of what to aim for is a small piece of protein around the size of you palm or between 100 and 150g per serve, no more than 100g of carbs per serve and the rest of the plate filled with veggies. Any teams serve these size potions will be off to a great start.
